Leafy Greens from Your Own Backyard

Unsure how to cook all of those greens you got at the farmers market or in your CSA box? Think you can only make a salad out of greens? In this free Zoom class, we will explore cooking different types of greens and how you can make a tasty dish using just the greens you have on hand and some seasonings. We will be making Greens with Carrots, and here are the ingredients so you can cook along with us:

  • 8 cups greens (try kale, bok choy, collard, mustard, or others)
  • 2 teaspoons oil
  • 2 large carrots, peeled and cut julienne (thin strips) or coarsely shredded
  • 1 clove garlic, minced (or
  • 1/4 teaspoon garlic powder)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon ground coriander (optional)
  • 1 pinch cayenne pepper (optional)
  • 1 Tablespoon vinegar
  • 1 and 1/2 teaspoons low-sodium soy sauce
