Try out this Zoom class on Monday, June 21st from 6:00 to 7:00pm about exploring different colored fruits and vegetables and why it is good for you to eat them all! This class was created in partnership with Healthy Food For All and the Food as Medicine Program.
We will be making a Plant Parts Salad, and here are the many optional ingredients. Pick one from each category based on what you have available and/or what you like:
-Root: carrot, beet, turnip, onion, parsnip, radish, etc (grated, sliced, or chopped)
-Leaves: kale, spinach, swiss chard, bok choy, pak choy, leaf lettuce, red or green cabbage, etc (these are being grown locally now!)
-Flowers: broccoli, cauliflower, artichoke hearts, etc (cut into small pieces)
-Fruits: tomato, zucchini, bell pepper, cucumber, etc (savory; sliced or chopped); apple, orange, strawberries (growing locally now!), pears, grapes, etc (sweet; sliced or chopped)
-Seeds: one 15-ounce can of beans (try black beans or chickpeas); 1 cup corn, lima beans, green beans, etc; 2-3 tablespoons of roasted walnuts, sunflower seeds, etc
